Baux-de-Provence
An eighteenth-century mas turned five-star hotel below Les Baux, with its golf course, agro-ecological farm and permaculture kitchen garden. Five ways to sit down to eat — from the Michelin-starred table to the zinc bar — all fed by the same garden, under chef Lieven van Aken.

The starred table
Michelin-starred since 2018. Chef Lieven van Aken draws on the estate’s own kitchen garden and on his Flemish roots — an unexpected back-and-forth between Provence and Flanders.
The relaxed one
A seasonal menu built on the estate’s agro-ecological farm, its own olive oil and bread kneaded on site. After the eighteenth hole, or simply for lunch.
The meeting place
A zinc counter set in one of the estate’s oldest buildings, its openwork brick walls intact. Cocktails, a fireplace, and a pianist — jazz or gypsy — on Saturday evenings.
The Sunday institution
Every Sunday the great glass room is laid for brunch. From 12 July to 16 August it gives way to the Sunday Grill: mezze to share, then grilled fish, meat or lobster served in the middle of the table.
To start the day
A buffet served under the glass roof: pastries and breads from the estate’s baker, honey from its hives, fresh farm eggs cooked to order.
